Sainte Anne Resort & Spa : the finest cuisine in Seychelles

![]() Besides additions to the luxury accommodation and varied leisure facilities, there has been a strong focus placed on upgrading the existing restaurants and creating two additional dining venues, providing guests with extra choice and flexibility. The resort now has four restaurants, each offering a different atmosphere and food style. From enjoying a casual meal on the beach to sampling haute gastronomy in lavish surroundings, guests are spoilt for choice. The main restaurant L’Abondance, evokes “an island on an island”, set as it is opposite the shimmering sea and pool and edged by cool reflecting ponds. The restaurant now has a separate entrance where the Restaurant Manager and friendly hostesses await to greet guests and lead them to their tables. The water features are essential to the restaurant’s design and accentuate its generous proportions while creating a natural sense of style enhanced by gorgeous plays of light. The floors recovered with luxurious decking bring warmth and comfort to a new level. The lighting itself was entirely reviewed to create intimate nooks, adding a sense of private dining. Open for breakfast, lunch and dinner, L’Abondance can seat up to 120 guests. Dinner may consist of an international buffet, a “table d’hôte” or a theme evening where the staff expands on the concept by wearing costumes reflecting the theme. Central to the restaurant, the buffets areas have been extended and entirely revamped to accommodate “live cooking”. From its look-out at the top of a granite outcrop Le Mont Fleuri restaurant offers commanding views of Sainte Anne island and across the sea to Mahé. Known as the finest restaurant in the Seychelles, Le Mont Fleuri treats guests to an ambiance of discreet luxury. Dining is at tree-top level where guests may choose superb dishes, an example of which is “hazelnut encrusted roast lamb, served with potato gauffrette and a delicious combination of truffles and artichokes”. Two new restaurants have been created directly on the beach, inviting guests to dine alfresco while digging their toes in the sand. Creating an ambiance that lives up to the restaurant’s namesake, Le Robinson is situated in a spectacular setting, with an uninterrupted view over the ocean. Set on the beach beneath Le Mont Fleuri restaurant, it is lined on one side with spectacular granite rocks and on the other with tall Takamaka trees. Hidden from view, Le Robinson resembles a “pirate lair” or secret cave. The mood is one of seclusion and authenticity enhanced by rustic-style tables and chairs hewn from driftwood. Providing 5-star luxury down to the smallest detail, Sainte Anne Resort & Spa has created personalised service which has entailed setting up a small lounge area next to each table to separate the pre-dinner drinks from the dining experience itself. Dotted on the beach opposite L’Abondance is a string of thatched pavilions linked together by a stone walkway, providing the setting for L’Océane restaurant. Simplicity and authenticity are the restaurant’s hallmarks. Translated into English as “ocean”, it is therefore only natural for the restaurant to specialise in fresh fish and seafood complemented by a few local dishes. Only the freshest catches of the day are selected and cooked to order. In this enchanting setting, guests may sample a delicious smoked marlin carpaccio served with a palm heart salad served with a crab and tropical dressing. The four restaurants consolidate the reputation that Sainte Anne Resort & Spa has earned in providing the finest cuisine in the Seychelles. |
